The standard sets a number. Almost nobody measures it.

AS 1851-2012 says grease should not exceed 0.2 mm averaged across your exhaust system, or 2 mm at any single point.

That measurement is taken inside the ductwork and at the roof fan. Your cleaner reaches the first metre.

Council inspections do not close the gap. They are occasional, limited to what can be seen inside the kitchen, and do not extend to removing filters or climbing to a roof fan.

Then the building surveyor asks for the file

Where your occupancy permit lists mechanical ventilation as an essential safety measure, the kitchen exhaust sits inside your annual reporting obligation.

Under Regulation 225, your municipal building surveyor can request the records, and they must be at the building within 24 hours, going back ten years.

Insurers want the same evidence, and they tend to ask for it at claim time.

Buildings come up short for one reason. The work was booked as a clean rather than as a service with a certificate behind it.

There are two outcomes, and both of them are useful

If the system is compliant

You receive a certificate of compliance, the photographs and our recommended next service date. You have paid for an audit inspection and avoided a clean you did not need.

If it is not

You receive the same evidence plus a scope covering the part of the system that needs work, and the audit inspection fee comes off the quote when you approve it.
